Winter Solstice, as the name implies, means the coming of winter. As an important solar term in the traditional Chinese calendar, it is also a traditional holiday for Chinese.
In the north of China, there is a traditional saying like this: "eat dumplings on the Winter Solstice and eat noodles on the Summer Solstice." Following the custom, people in different areas would all have dumplings on the Winter Solstice.
